Morrocan green tea with mint as a welcome treat

Finally i got to it right and it's about time ,it's been so long that i was thinking of starting this blog , finally it happened ...
let me introduce myself i'm a morrocan  i live in Nelspruit  with my south african husband , my obsession with food and mostly with la Patisserie started when i got married and i moved to south africa and started missing all the treats that i was used to and it was impossible to find them here , so i decided to make them and thats how my journey with la cuisine began...and thrue this blog i would like to share it with you....
So as it is custom in morrocan tradition to offer green mint tea as a sign of hospitality  i decided it would be my first recipe i would share with you ....
Morrocan green tea with mint
Ingredients :



  • 2 teaspoon loose  Green Tea leaves also called gunpowder (it's very difficult to find it here in south Africa i've tried the chineese one but i didnt like it so you can substitut it with the sachet and the best is the Spar one or the Twining one , the Woollies one makes it very bitter)


  • 1 large handful fresh mint leaves, washed

  • 1/2 liter (about 2 cups) boiling water (depending on how much your pot can contain)

  •  Sugar (depends on how sweet u wnt ur tea , personally i dont put at all)



  • Preparation :
    • Add the green tea to the teapot, and bring the water to boil in a kettle or separate pot. Pour in a little bit  of hot water and let it steep for 2 minutes.Pour the steeped mixture into a glass and put aside .
    •  Add some more  of hot water to the pot, and swish the pot around several times. The liquid should be full of black specks, pour it out and discard. Add the steeped glass of tea, the rest of hot water, the mint or herb desired, and sugar to taste.
    •  Gently reheat the pot until a few bubbles emerge from the top, then turn the heat off. (this step is to make your tea stronger you can skip it if you want , i do !!!)
    • Traditionally the teapot is lifted above the cup whilst pouring to form bubbles. Before drinking, a glass of tea is poured into a glass and back into the pot three times to infuse the taste.
    there is many other herbs that can be added instead of or even with mint



  • 1 handful peppermint

  • 1 handful pennyroyal mint

  • 1 handful dry lemon verbena leaves

  • 2 sprigs wormwood or Absinth (often added to a handful of spearmint -wormwood is very strong, so you should  steep it in a glass of hot water for two minutes before adding the wormwood sprigs to the teapot and discarding the steeped water)

  • A bit of  saffron threads

  • 1 handful of  orange blossoms (often mixed with a handful of spearmint)

  • you can also add or substitut the green tea with jasmin tea ....




  • Green tea with is a very popular drink in my country , it's actually our official beverage It is made all over the kingdom to honor the guest, celebrate a formal occasion or to unwind over glasses of the sweet, aromatic brew.

    3. yes Fatima i miss that too ,n i miss it with u sis aswell sitting over the tea all together watching tv n gossiping ah i tell u those were the golden days...lol
